Commemorative Hawg with a Heart to raise funds for Operation BBQ Relief

As part of a fundraising effort for Operation BBQ Relief, four of the top whole hog championship pitmasters in the country will lead a two day class on how to cook a whole hog from start to finish for competition and catering.

: The Shed BBQ and Blues Joint, Memphis in May Whole Hog Champion, and TV personality from Up In Smoke BBQ Show and the new show on Food Network The Shed.

Mark Lambert of Sweet Swine O Mine Competition Team and Distributing: two-time Memphis in May World Champion, and numerous other championships

John Wheeler of Natural Born Grillers: three-time Memphis in World Champion, numerous Grand Championships, and co-owner of Memphis Barbecue Co.

Allen Smith of Boars Night Out: 2012 MBN Overall Team of Year and 2012 Team of the Year Ribs, Shoulder, and Hog, as well as numerous other Grand Championships

The class will focus on the 3 P’s of Whole Hog: Preparation, Presentation, and Profit. Students will learn about the different types of cookers, the different breeds of hogs, selection of the hog, anatomy of the hog, dressing, injecting, rubbing, and finally, the cooking of the hog!
Special guests include: Famous Dave Anderson, Danielle “Diva Q” Dimovski, and David “Butcher” Bouska, to name a few.

Friday night will feature a party with great food and live music at one of the largest corporate events at the American Royal, The Original Juan’s/Ultimate Tailgate Party. Students may hang out at The Royal Saturday and Sunday.

OBR will have an All-Star Team cooking the Open, two OBR members are cooking the Invitational, and three are cooking the Open.
The cost for the event is $1,500 ($1,300 of which is tax deductible). We are offering a discounted rated of $995 to NBBQA, HPBA, KCBS, Florida BBQ Association, New England BBQ Society, California BBQ Association, Mid Atlantic BBQ Association, Texas Gulf Coast BBQ Cookers Association, and Minnesota Barbeque Association members.

If you are cooking the American Royal, you can set up on Wednesday. The class will be completed mid-afternoon on Friday, so students will have a break before the party. That will give anyone cooking the Invitational an opportunity to do any prep needed for the Invitational.
All meals (breakfast, lunch, and dinner) and beverages are included, as well as a goodie bag. Hotel and transportation are not included.
