I have to post on forum or I will be opening the smoker every five minutes.
Doing a 7.5 pound shoulder with an original rub. Supposed to be done around 5 put it on at 7 am.
Doing bacon also....
better go check!

2 butts, 3 racks st. Louis style ribs, wings, abt's, corn, baked beans and bologna. Using peach wood that I got from 57 Smokehouse cooking team. It smells wonderful.

Thinking bout cooking a few rac o ribs. Wanting to try something different. Any suggestions on rubs I can make. Sauces??

Bacon was awesome! Shoulder is currently at 175 degrees has 3 hours left.
I suggest smoking bacon anytime you can.

Also get a bag of pretzels, the regular kind, a bag of Rollos and bacon. Set your cooking device to 200 degrees. Slightly cook your bacon and cut it into 1+ inch strips. Take a pan and put a pretzel on the pan, topped by bacon and a Rollo. Place it into the cooking device for about 10 - 15 minutes until the Rollo is melted. Let it cool and enjoy. They are pretty good! Bacon, chocolate, carmel and pretzels go very well together!

Grilled hamburgers smoked w/Jack Daniels wood chips, cheese, garlic, pepper, soy sauce and mayo all on a toasted bun. Perfect. Well, almost perfect...no tomato. Fiddled around and waited too late to get them.

Time to vent. I gave my BIL a modded ECB a couple of years back, and eventually, he got interested in Q. Now, he is at the lake for the summer, and my wife constantly wants to go up and visit while he cooks for all of us on his new 22.5" WSM. I look forward to cooking for a crowd on Memorial Day, 4th of July, Labor Day, etc., but now, we're always eating someone else's Q!

Bought some ribs for this 4th, and the wife told me on the 3rd that we were going up again. More meat in the freezer. I have GOT to put my foot down!
