Did a 3 lb. bottom round roast on the Stump's Backyarder yesterday. Rubbed with oil and Cabela's Whiskey Steak rub. Cooked to 138 and foiled. Sliced deli thin and made sammiches with homemade yogurt biscuits with chice of horseradish or tabasco mayo. Good eats. Sorry no pics

No cook this weekend. Time got away from me. Had planned to do some grilling. Did buy almost 10 lbs. of pork belly today. Most is in cure for smoke Easter Sunday morning. Maple syrup, apple juice, light brown sugar, and sea salt (forgot to look for pink, again, but sea salt worked fine for last batch. Will use an apple / maple mix for smoke. Saved a little for an experiment - pineapple juice, ginger, and fresh cracked black pepper cure. Because of the enzymes in the pineapple, I won't make the cure until Thursday night when I get home from work. Been contemplating wood for smoke. Need something light. Almost thinking cracking a coconut and using husk, maybe a light touch of oak or a little grapevine. Any suggestions? Also making a batch of pickled beets & eggs for Easter - it's a family tradition. Added whole cloves, whole peppercorns, celery seed, and juniper berrys while I simmered the beets and they'll be in the jars with beets, eggs, and raw onion chunks. 2nd time I'm making with fresh beets, have always used canned or jarred - frrsh are way better!
