I cured and smoked my own bacon for the first time over the past couple of weeks. It is really good! As long as I can find fresh pork belly, doubt that I will ever buy store bought bacon ever again. Came home from work last night and made a big pot of pinto beans to take to work today for the guys ... Approximately 1 lb. slab bacon cubed 2 lbs. dried pinto beans 1 cup diced celery and onion 1 jalapeno pepper diced fine 3 whole cloves garlic Cumin, paprika, white pepper, and sea salt - all to taste, none measured Water to cover and simmer to 1" This has been simmering all night in a Rival BBQ Pit. I've had one for years,maybe did a piece of pork butt in it once or twice, but it is a great bean pot. Fresh bottle of Frank's Original Red Hot sauce to take for guys to season their own to taste.
