I have used Hickory in the past. A friend dropped off 3 truckloads of Hickory for me the other day. I got it all cut to size & split (he loaned me his spliter too). I have noticed a smell coming from the drying wood that I can only describe as a "manure" smell. I am currently out of Oak wood, and have a cook to do this coming weekend. Anybody got any input on weather I should use the Hickory for the cook?

I've never dried fresh hickory. I have done apple, cherry, oak, and maple and have never had a stench. Think I know what you mean though and think it comes from the wood being wet and starting to rot. You can sometimes walk through the woods and smell the decay if there are downed decaying trees. I'd probably check the wood for signs of internal decay or rot.

IF IT AINT SEASONED I WOULDNT USE IT,THAT SMELL IS ALL PART OF THE SEASONING PROCESS

Thanks for the advice. There was a tree that was delivered about 2 months befor the 2nd load, in the first load when I was cutting & splitting, there was no decay & it was clean wood. The 2nd delivery, I remember there being a small hollow spot in a section. I do not remember a smell to the fist tree, but do on the 2nd section. Duh.. Well it makes sense to me, there COULD be a clue here ! Thank you for making me think, & getting the Crayons out for me & drawing me the picture. I will use the 1st tree that was delivered (no smell) & go through the 2nd to make sure I have no decaying pieces. I am doing a small wedding (about 25), cooking chicken & butts, but want to do this guy a good job because he owns a party rental center. Could be a good contact for more buisness. Thanks guys! Time to go get busy on about 1 & 1/2 cords of Hickory !
