Typically, Green Chili is made with either pork or chicken, not beef. Nothing red in it at all. No tomato products, no paprika, no chile powder, etc... Onions, garlic, green chiles such as poblanos, jalapenos, serranos, and of course, Hatch green chiles. Tomatillos are sometimes used in place of the tomatoes. Chicken broth and a bit of oregano. Season with salt and pepper.
I wish I was born with two stomachs. All the best, Al. |

OLD ROAD DOG CHILI ... RENDER I LB BACON. SAVE THE GREASE.TO FRY UP A COUPLE LBS LEFT OVER, BAKED POTATOES.... CHOP INTO CUBES, A COUPLE LBS SMOKED PORK. (I OFTEN USE TRIMINGS)ADD A COUPLE DICED RED OR SPANISH ONIONS TO THE MIX AND SIMMER 3-4 MINUTES. ADD TO THE FRIED POTATOES. DUMP AS MANY ROASTED GREEN CHILI'S AS YOU FEEL YOU WOULD LIKE OR WHATEVER THE FRIDG WILL GIVE UP. HECK I'VE EVEN USED CANNED GREEN CHILI'S OF VARIOUS HEATS AND AGES.. DON'T SEEM TO MAKE MUCH DIFFERENCE. CRUMBLE THE BACON BACK INTO THE WHOLE STEW AND YOU MAY OR MAY NOT, HAVE SOMETHING SPECIAL. ITS ONE OF MY FAVORITES... AND WILL APPEAR IN MY COOK BOOK .....SUM DAY
