Hey everyone! We all need leftover turkey ideas! Here's mine, and it's a super-hit for us! We actually make extra turkey and freeze it so we can do this in the summer!


THANKSGIVING PIZZA

* Leftover chopped Thanksgiving turkey (preferably smoked)
* pizza dough
* Alfredo sauce (instead of regular pizza sauce)
* onion, chopped
* dried cranberries
* red wine
* shredded mozzarella cheese
* spinach

Cook the onions on low heat on a skillet until nicely browned, will take a while. Simmer the dried cranberries in a cup of red wine (or chicken broth if you prefer) so they become nicely bloated. Chop the cranberries. Cook the spinach in a skillet and squeeze out excess water.

Combine all ingredients on rolled pizza dough and bake! Yum yum!!

Turkey and Sausage Gumbo! Simply substitute turkey stock for chicken stock and pulled turkey meat for chicken. I've made a pot the weekend after Thanksgiving for the last five years.

NOVEMBER 1980 BROWN EYES AND I HAD JUST PURCHASED THE OLD WAREHOUSE ON SAGINAW RD IN RED KEG. THE KIDS WERE WITH THE "OTHER FAMILIES" AND WE WERE DOING FINISH WORK ON OUR NEW KITCHEN IN THE OLD WAREHOUSE. RED KEG IS STILL MY ADDRESS TODAY. A KNOCK AT THE DOOR AND A NEIGHBOR LADY WITH TWO TURKEY AND BACON SANDWICHES ALONG WITH SOME LEFT OVER CRANBERRY SAUCE . WAS POSSIBLY ONE OF THE BEST DAY AFTER DINNERS I EVER HAD.. I TOOK TURKEY TO MY NEIGHBORS LAST YEAR AND INTEND TO DO IT AGAIN THIS YEAR .. THOSE FIVE KIDS WITH MOM AND DAD STRUGGLING WITH THE "NEW ECONOMY" WILL BE LESS AFRAID OF THE OLE HERMIT THAT LIVES IN A WAREHOUSE NEXT DOOR.. AND I'LL BE GRATEFUL FOR THE FAIRIES that sneak into my yard and moww the grass when i am away ..

Paul - Your pizza recipe sounds great but why freeze leftovers for summer? Just smoke up another turkey or turkey breast.
Turkey and sausage gumbo sounds good to!
Billy - I don't think I've ever met anyone with your thoughtfulness, kindness, and generosity. You inspire us all!
Im thinking the traditional turkey sandwich on Friday, maybe some turkey hash or turkey salad, and bones and other leftover for some turkey soup by Saturday or Sunday.

The pizza was excellent! We've had it twice so far! We'll have to smoke another bird real soon, keep eating it!

It's official... I'm tired of turkey leftovers

Have had turkey barley soup, turkey tacos, turkey stir fry, turkey sammys, turkey pasta,, THAT's ENUFFF!!!.............. until I cook the next turkey

Well maybe, just maybe Bobber, you should cook a smaller turkey. I like turkey, but just don't like it on Thanksgiving. I almost feel like a "good soldier" in a Commie country by doing it. You must eat turkey on Thanksgiving, or else!!!
That being said, I enjoy a good pot pie, and my favorite is dark meat fried in butter with green onions, then wrapped up in a tortilla.

I wish I was born with two stomachs. All the best, Al.
