I love poultry salad for lunch and as a snack anytime. I smoked poultry yesterday and except for a few slices of breast for a special sandwich recipe, Beverly has turned a whole turkey into turkey salad. Turkey, celery, onion, a little jalapeno (mine are especially mild this year), mayo and mustard. The smoked meat kicks it up several notches. It's delicious. Turkey - it's not just for Thanksgiving anymore.

I love a good chicken salad... and I make mine much the same as you do your turkey.
Sometimes I just a heap it up on a bed of lettuce (or some kind of greens) and it makes a meal.
(And a huge glass of sweet tea!)

This was an interesting write-up at the NBBQA web site.

31 percent of American grill owners are barbecuing more than they were a year ago, because they are “trying to eat healthier.” Many are turning to turkey as a protein option. A three-ounce serving of boneless, skinless turkey breast contains 26 grams of protein, one gram of fat and no saturated fat. The www.eatturkey.com Web site, from the National Turkey Federation, offers turkey grilling recipes and tips.

“The variety of available cuts makes turkey the perfect centerpiece for the cookout menu,” said Sherrie Rosenblatt, NTF’s vice president of marketing and communications. “Turkey tenderloins, cutlets, steaks, boneless breasts, thighs, ground turkey and drums are all delicious, convenient ways to enjoy the great taste of turkey. Any leftovers are ideal for salads, sandwiches and snacks to take on all-day outdoor activities,” she added.

To guarantee “grill master” status every time, be sure to rely on a meat thermometer when determining doneness. Cooking times vary depending on the thickness of the cut of turkey. A meat thermometer should be inserted in the thickest portion of the meat away from the bone. White meat is ready at 170 degrees F, dark meat at 180 degrees F, and ground turkey, such as turkey burgers, at 165 degrees F.

For lunch today, I just got out the container of turkey salad and a spoon. Crude but effective.

When ever I can find turkey for a good price I love to get it and slow smoke it. Great for sandwiches and salad. Of late it has been hard to find for I had several willing to purchase some if I smoked it but we had problems finding any in the area a few months back.

Another great thread thanks all, I just pulled a Turkey Breast off the smoker. Tomorrow we will have Big Dude Turkey salad samies for supper.

I had several request for turkey a few weeks back but after several trips to the store I was unable to locate any. The food service spot in Gadsden had them but $$$$ more than my buddies would pay and I still would have to smoke them and try to pay my expenses so had to pass. I am always on the watch however for nice smoked turkey is hard to beat for sandwiches, salads and enchiladas.
