Anybody got a good recipe for pickled eggs? I'm looking for a smoky spicy brine that does not use beet juice.
My father used to own a grocery store years ago and sold pickled bologna by the piece. When the bologna was gone, he would throw in some boiled eggs and sell them. That's the flavor I'm trying to replicate. |

ya know theres a whole bunch of recipes on the web and I've tried several but I found that the best thing to do is go to the store and buy a big 'ol jar of pickled bologna or red hots, eat them all up with cheese and crackers and cold beer, then fill the jar with hard boiled eggs. Let them set just a few days and they are great. You can use it over and over.

| sfisch those eggs brings back memories, My ole man ate alot of bar food, Pickled Pigs Feet, Brains and Eggs Sandwiches, Pickled sausage, fried bologna, etc. Seems we always had a jar of pickled eggs in the fridge. Your right those were the bes, although those beet pickled eggs were good too. |

I HAVE BEEN PAID BIG MONEY TO BOOTLEG A LARGE NUMBER OF LOCAL FARMER PEETS RED HOTS TO FLORIDA ETC.. I KNOW THOSE BRINES ALWAYS WERE DESTINED TO BE USED FOR PICKELED EGGS. PRETTY SINPLY THEY ARE APPLE CIDER VINEGER AND WATER HALF AND HALF. WITH A HANDFULL OF DRIED RED PEPPERS THROWN IN AND (OPTIONAL) A TBSP OF SUGAR .. A LITLE SALT AND AN OCCASIONAL RED PEPPER CAN KEEP THE FLAVOR GOING FOR A LONG TIME ..
