I had the opportunity to cater the small business assoc here in Florence KY. Everyone attended loved our food. (A competitor) was there trying to drum up some business. I had a request to quote a party of 50 - StLouis Ribs, Chicken halves - two sides and breads. It worked out to like $10.00 per person. (The competitor) got the job. Those undercutting @!$!#%$@#$^#$! That's all I have to say about that. Hope they enjoy the McDonald style BBQ vs the Filet Mignon of BBQ. I will not take a job and lose money! Thanks for the vent.

That's the attitude! The old addage you get what you pay for. I never try to gouge or overprice anybody...but I definately won't pay nobody to work my butt off and have sore feet just to get a job neither.
Vent anytime....we here for ya!

In my opinion $10 is cheap for that type of catering. I hope the *&@@$% bum lost his butt and has sore feet to boot. You keep doin what your doin they will come around to ya I promise ya that diamond.

Hold your ground Dave. In time you reputation for quality and value will allow you to still get gigs like this for a small premium over the low dollar bidders. As a general rule experienced clients, that is to say those that use catering companies with some regularity often steer away from the low bid mentality. Good luck and stay with it.

Dz,

Chances are good that the shameless interloper doesn't frequent this forum. For if he did he would never think about walking in and taking advantage of your customers at their most vunerable moment for a sales pitch - the time during and just after eating your que.

So, here's a fairly significant advantage you can have over him in the future: get with a local herbalist and ask about a kidney flush or kidney support supplement. Often times the cause of hurting feet is a need to flush the kidneys. Try it and see the difference.

See where that guy is a year from now.

I get calls sometimes wanting me to cook events for next to nothing.One of the people I knew for several years.I explained to him how long it takes to cook that much meat along with the sides then told him that you can buy cheap bbq from Dairy Queen or you can spend a little more and get quality bbq that your friends will remember and talk about for along time.We cooked a sample for them after we got back from a contest. We got that job and 4 others just from that event.

I can not blame someone for being aggresive. If my familys financial future depends on me getting the next gig,you better look out because I just may want to "make it" more than him. Just my 2 cents worth.I would never lie or cheat to get work,but biz is biz and let the best man win.I have bid lower prices to do catering jobs,just to get my foot in the door. I dont blame someone for being aggresive in sales.
If I get in a fight and it looks like you may be about to put a major beating on me,I just may pick up a chair or a pool stick to make it stop. If this is "cheating",then I will cheat before I take a beat down

Business is business and you can't count your chickens until they hatch.

Hold the price for what you think you can make money at because I'll bet that is why you do it.

Don't talk bad about a competitor in front of customer , that will chase customers away.

If in it for the long run, price it to make money and don't lower your Quality.

I'M HEADING FOR FLA NEXT FRIDAY ..WILL BE ON THE BEACH IN TREASURE ISLAND, FOR TWO WEEKS ..WOULD BE HAPPY TO CONDUCT A CATERING CLASS AROUND THE GRILL AT THE SUNCOAST MOTEL ONE OF THOSE NIGHTS . I CAN PURCHASE FRESH FISH AND OTHER GOOD STUFF JUST DOWN THE STREET .. I WILL BRING MARGARITA BLENDER ..YOU BRING ER AH ER SOME TEQUILA, LIMES AND MIX .....

May I take your class via computer - phone? I promise to mix a margarita and pay for yours if that works for you?

I'd love to see you promote a catering/marketing class. We all could get recharged and ready for the holidays and next year.

Look up Jim and get a good Margarita from him and soak up the sun. Get a pre-tan...hehehehe and cover those feet. Wear a hat too.

I DO NOT negotiate on price (unless we are talking over 200 people!)I never would have gone into this if I thought I had any real "competitors" for what I do here. Smokey Bones will do meats and sides for 100 @ about $6.50/person . They just "pan-up" today's leftovers and heat them up before YOU pick them up.I charge $15/person. For that, I take the pit to the site and provide the spetacle, history, method, advice, lore, and taste of real wood smoked BBQ. I find that the real market exists in the demographic where money is not the main concern. I have cooked in the driveways and backyards of many million dollar homes. Those jobs beget more of the same. Corporate gigs are also quite lucrative. I would probably not even consider the cook for 50 people. $300-400 profit for 30-40 hours of work is not worth it to me. Now, I "may" take it if the job "appealed" to me, or had the possibility of generating more jobs. The point is, don't ever box yourself into a corner financially to do this stuff. In other words, do your homework, and don't go into debt with the idea that you HAVE to take jobs to pay it off! (In other words, don't try and do this for a living!) It makes a nice side gig! Woody
