All, I have a catering question.... I will be doing a party in the near future and the customer wants me to pick up the meat ( Brisket Ribs Porkbutt )The butcher where I get my meat from is well known throughout my area and my customer knows him. I plan on giving the customer the bill for the meat so they can see what I laided out.....The party is for about 20-30 people with some kids thrown in.... Do you charge by the person and whats a fair price or do you give a lump sum price???

still doesn't change the fact that you need to charge more, if you pay more for customer requested items....

if someone wants a kobe beef brisket, instead of a good ole choice brisket, ya gotta charge more.

basic economics 101..

again, if one is getting ribs at $2.99 a pound, and your catering brochure states you will sell those ribs for $20... that's it.. you're selling those ribs for a stated price...

but then Mr. and Mrs Moneybags come knocking at your door and say they want your ribs, but they want Heritage Durock or Ossabaw Island Hog ribs from one of Ed Mitchell's farmers, you will, undoubtably charge them more...

That, my friend has nothing to do with demography/geography/philsophy/ or any other "phy"..

WHEREAS HERE IN MIDDLE EARTH, OUR CUSTOM BUTCHER SHOPS OFFER QUALITY FROM GENERAL RETAIL TO ACTUALLY GOOD STUFF, USUALLY OF "BETTER QUALITY" THAN MAY BE FOUND IN THE LOCAL GIGGLING PIG OR SALT SOAKED (SO WE CAN GET LONGER SHELF LIFE)BIG BOX STORES. I WOULD OFFER THAT A CATERER LOOKING TO EXPAND HIS BUSINESS WOULD PRICE COMPETIVELY NO MATTER THE STARTING POINT. REMEMBER JUST BEXAUSE IT LOOKS SHINEY IN THE SKY, THAT BY THE TIME IT GETS TO EARTH, ITS JUSTANOTHER ROCK.. I'd just charge them a total, per person, price; which would be impacted by what you pay for the meat...so, if you are able to do a regular catering, and pay, let's say, $2.99 per pound for ribs, and they tell you to use a butcher, who is going to charge you $3.99 a pound for ribs, you need to price the butchers ribs about $3 a head more.. A conversation should have already occurred that stated by using their, "well known" butcher, who presumably has premium, or vastly higher quality, meat, the price is going to be higher than what you usually charge, per person.. If they are requesting that you buy the meats at said butcher, they already know the price is higher... Who knows, maybe they have the old "hook" with butcher..so the meat you buy might not be that much more expensive
