I would like to know if anyone has experience with a southern pride type and if you can obtain a really good smoke flavor with one, or would the stump's be a better option.Thanks |

Posted - 05/17/2012 : 06:02:36 FORTUNATELY BUSINESS HAS SLOWED THE PROJECT SOME FOR BOTH THE CUSTOMER AND ME. WE HAVE PLAN ON SLOW BURNER UNTIL WE CAN DEDICATE MORE TIME IN THE FALL.. HAVE ALL LOANS IN PLACE. WORKING THROUGH MENU CONCEPT AND EQUIPMENT NEEDED TO SUPPORT THE MENU ONCE WE HAVE FINAL MENU COMPLETED.. TRYING TO KEP INVENTORY NARROW BUT AS ONE OF OUR CONTROLLABLE COSTS YET OFFER GOOD VARIETY.. BRIEFLY HERE IS AN EXAMPLE. FRESH ATTITUDE AND SEASONAL VEGETABLES COMBINE TO MAKE A GRILLED CHEESE SANDWICH THAT CONTAINES, MOZZARELLA, SMOKED PROVOLONE AND ASPARAGUS SPEARS GRILLED IN FOUR MINUTES WITH OLIVE OIL AND RED WINE VINEGER SERVED ON TEXAS SIZE, GRILLED WHOLE GRAIN BREAD FROM LOCAL BAKERY.. WE HAVE ALL THOSE ITEMS MANY MORE TIMES ON THE MENU IN DIFFERENT RECIPES. MOZZARELLA CAME TO ME WHEN LOOKING FOR MICHIGAN MADE CHEESES AND IS VERY GOOD ON A GRILLED SANDWICH PRESENTATION .. ANOTHER IS CAPACOLA GRILLED AND SERVED ON SANDWICH WITH SWEETENED RED ONION, MOZZARELLA SIDE OF FRESH BLANCHED ASPARAGUS IN LEMON BUTTER SAUCE. ETC ETC.. IT TAKES HOUR AND HOURS TO IMAGINE ANYTHING NEW BUT AS LONG AS MY OLD HEAD HOLDS OUT I WILL LET THE OLD IMAGINATION LOOSE UPON THIS PROJECT .. WOULD LOVE TO COMPLETE IN SAME TIME AS I HAVE DONE PROJECTS IN THE PAST 9 MOS TO A YEAR. THIS MAY BE MY LAST SO SAVORING THE FUN OF THE CREATION. LOOK HOW COMPLEX BABIES ARE .AND THEY ONLY TAKE A YEAR OR TWO FOR MOM AND DAD JUST TO MAKE THE DECISION TO START. ER AH ER AH SOMETIMES.   AND ANOTHER 9 MOS TO COMPLETE. THEN THE WORK REALLY BEGINS..

THERE ARE A "BUCH" OF COOKERS THAT CAN DO THE JOB .. COMES DOWN TO FINDING A FIT FOR YOUR ATTITUDE. LIKE TO STAY UP ALL NIGHT AND ATTEND THE SMOKE. IS DEFINITLY A CALL FOR A STICK BURNER. LAZY MAN QUE MAY CAL FOR DRAFTING GADGETS, SAWDUST BURNER AND ST IT FOR GET IT EQUIPMENT.. THEY ARE ALL GOOD IN THE RIGHT HANDS...

Posted - 02/24/2012 : 00:08:30 For a small smoker you can't beat the Weber Smokey Mountains. I have both the 18 1/2 and 22 1/2"rs. For less than $700 total - including mods - I have some great cookers. I Minion and have no trouble holding temps - my 18 1/2 likes 250 right on - my 22 1/2 likes a little lower 245 - 248. Once their dialed in it's let them cook - rarely have to make adjustments or add additional fuel. www.weber.com

Posted - 02/22/2012 : 15:51:05 Check out Stumps. My gravity fed Baby holds the temps steady even without a guru or digi Q. I can easily get 6 hours and up to 8 hours of burn time with the chute full running at 250.
