I am getting ready to make an offset smokerout of a 180gal water tank. what would be a good comfortable height for the main rack?

The tank is painted on the outside but is raw on the inside. It had a bladder in it.

I would position the main rack right in the center to gain the maximum cooking area for the meat. Here is my homemade unit from a 110 gallon oil tank:

What material was used to fabricate the water tank? 36 inches is a good working height.
