Been working on this one for some time now, having lots of good luck with it!

Crack some eggs in a large bowl and toss in chopped herbs (thyme and chives work), minced garlic, shallots or onions, and minced pepper. A splash of buttermilk is a good addition too! Let stand, preferably overnight in the fridge.

Get some day-old bread and dip it in the batter you've just made up. Place on a well-oiled grill with direct heat on medium and toast them up. Best when served with real maple syrup, and I've also found that sometimes I like it with a slice of cheese on top!
